Nice game ideas! Hadn't thought of a few of those, definitely will probably try to implement a golf course on my estate now! So also I've heard you can play beer pong with berries and tankards but still gotta set it up. You definitely can go tobogganing with a boat down a mountainside, results may vary due to how it's arranged.. But my favorite one, invented by me and a buddy I play with is "Viking Spear Catch" – so just like your golf game you throw a spear only here it's back and forth with a friend, but be blocking with your shields and you shouldn't damage if xp is somewhat equal and will pick up spear as soon as you block it, ready to throw again.. Will train you in both spears and blocking and is actually a lot of fun with a smooth flow like a game of catch.
What about a maze? Can make it from stone blocks and maybe even recreate the hedge maze from The Shining.

Speaking of greydwarves, perhaps a game where you compete to see how many you can kick into a pit? Bonus points if you can get a shaman or brute inside.

I've had thoughts of making a pachinko machine using the coal burners and 45 deg roof Not sure it it'll work, depends on the physics of how the coal falls.
