The one good thing about Eikthyr is that it's so big, you almost find it impossible to miss when shooting at it
I think the leveling works like this: It reduces the surface level by 1cm for example and joins the segments around it. Meaning it only works on a specified narrow patch (50×50 pixels for example). And it doesn't work on a huge area automatically, but rather just slightly reduces the ground piece by piece.
Your exposed because you used floor panels for the middle of the roof.
