I honestly think, that the Scene with Jayce and Mel foreshadowed Jayce betraying Victor. I think it showed, that Jayce is moving in another direction, getting more egoistic and into the council politics for his own good (even though he still cares about Victor). I dont really think, that they did this to ship Jayce and Mel.
Jayce does say he is 24 precisely in the second episode. And Viktor was assistant to the Dean, so he was probably an equivalent of a doctoral student. No idea why you are making them younger than stated 😉

Okay I'm gonna jump in for the age theorizing:
Jinx was probably 7 in the first act. We can't assume she was already 3 years into doing parkour
and thus closer to age 10during the events of Act I because if that was the case, Powder wouldn't have been so hesitant to do some of the jumps when they were gonna rob Jayce's workshop. Even Vi had to tell her "you're ready", implying that this wasn't something that she had done before. Also, not much time had to have passed between when they robbed Jayce and when Powder got everyone killed… maybe a few weeks at most.I like the idea of a time skip of maybe 7 years… it would make Jinx 14; which to me seems logical. Jinx likely has her own mental issues, but being around the age 14 also adds the emotional turbulence of a teenager into the mix.

According to the LoL fandom wiki, Jinx would be between 10 to 15 and Vi would be between 12 and 20, this is in the first act.
How I got this information:
Jayce is 24 in arcane, he is born between 961 and 966, making arcane take place between 985 and 990. Jinx is stated to be born in 975 so in arcane would be 10 to 15, Vi is stated to be born between 970 and 973 making her between 12 and 20.
