Best strategy for the caretaker is to get a scythe, dual crossbows, grenades, chugsplashes and whatever else you want.
Then use the scythe run to the side to get away from him and pepper him with crossbow shots. Since they are strong and shoot fast it is a reliable combo. Also when running with a scythe jump before you stop and you won't swing
