The boss heads should definitely be inside the banquet hall. 3 on each side.
Surtling farm-
1) Go to swamp
2) Find fire/surtling spawn
3) Drop workbench (stop spawns)
4) Mine around spawn so the area is under water.
5) Remove workbench
When clearing villages, you should drop all the excess black metal in the chests and mark the map. You never know if you’ll want more later.

Do an online series with other people
I can 100% confirm you can see the mushrooms with the vegetation turned off. Its how I farm for mushrooms for carrot soup.
Pay attention to bigger clusters of smaller trees. I have found the under those. I also have a theory I have yet to test that they seem to show up more after it rains. It seems like they do but Im not sure if its because its true or if Im just imagining that. But definitely look around clusters of trees/in shadows.
Definitely doesn't effect mushrooms. They will grow in your base in cleared out ground.
You might not have been messing up the parry timing with the two star, it was just those attacks were too much damage. Enemies do random damage and if its more than you can parry you will be knocked back like you messed up the timing.

Just farm more of the bosses.
in case this helps in any way, I suggest having one of your portals at homebase always be unassigned or default "". This way you don't have to name a portal BEFORE you go out. The caveat is you need to bring enough mats for 2 portals. One to setup as unassigned allowing you to travel between home base and the new portal. One to name the new portal (Outpost 13) without having to pre-name/create a portal at Home Base, or allowing you to travel back home through the unassigned portal because you didn't pre-name a portal at homebase. You could also have one portal also be used for any "cut" portals. Instead of destroying those outposts/portals, you can just keep their names and have one portal rotate between the lesser valued portals / destinations unless you need to.
Should spin off another series with your wife. Valheim is breaking records, jump on the money train….. You already have the serious side, make a funny side of it. Top 50 funniest moments of valeim has almost 1/2 million views. We are searching for it!

I play on a surface 4 so my vegetation is always off and I can confirm mushrooms and other stuff still spawns

get mushrooms from the meadows, the black forest has diddly squat
