Looks great, but I would reccomend making the windmill blades in different rotations from each other. 🙂
You could add a couple scarecrows. you can make some neat ones with the armor stands and pumpkins
You should build a docks and boats(like mini boats for fisherman or like for travel boats or a ship)in your lake since its fits perfectly when you decided to put your castle in the end of the lake.🙂

For the castle location… Is it a castle to defend the city or is it for the summer vacation of the king? The answer gives a good idea how to match the location and design of it.
A graveyard next to the church would make sense

Looking great! I'd say the hill with the moat is a good option for a castle. If you build it on the mountain it'll be covered in snow, which can be a huge headache
Don't do it on top of the mountains. The snow problems will be real. 😀 Plus, I love the mote idea.

That church is magnificent!!! But my favorite thing is the block palette!! It kinda reminds me of a more modern take on an old mansion or church or possibly a remodeled cleaner version. It's fantastic!!

You know, watching your videos is always a treat.
One tiny bit of criticism, during the building progress time lapse. The fast day/night cycles does seem a bit strobey and can make even non-epileptic folk like me feel a bit bleh. Is there a way in the replay mod to be able to smooth that out or something? Just a thought anyways.
Regardless, I really do enjoy your content. It's very inspiring and makes me want to get on and build stuff.
Edit: Pretty up the front of the church then make some crypts in the church basement 😉
