Maybe a piglin bastion, nether forest, nether fortress, or some other nether biomes. It would really add some color and add another layer under the built biomes.
I know i'm late, but i would love a birch forest. It was never added to the latest minecraft which i was super disappointed. I think it would make a great pivot point as it is a simple but detailed designed chunk. Love your work, Keep it up!

An ice spikes biome to introduce polar bears and have it be right beside the snowy taiga. Ps so far the world's look great
this is amazing as always, after the nether you should make a dark oak biome
with a small part of woodland mansion
also ice spikes could be placed right of the Taiga
