I'm not nearly as good a player as you, but one thing I do see when you play Vex is that when your Ult is down, it does really hamper your kill potential. The Ult isn't a super short CD like some champs, and is also a skill shot that I definitely see miss a fair bit. I'm not saying this makes the champion ok, but it does make her seem a bit less ridiculous than something like a good Viego. Regardless I always like your Vex games.

I think W max is prob better vs melees while E max is prob better vs ranged.
Also I like Vex and I think she's very strong. But I wouldn't say overpowered. I do think Riot should rebalance her to be a bit weaker vs ranged/immobile champs and power up her mobility counter/passive.

I would say that Vex has a fair balance of an only decent lane phase/kit + an exceptional team fight kit, all at the cost of no escape.
Champs like Yone have good everything, lol. That's what I consider busted.

the thing about wanting champs to have a perfectly 50% winrate is very shortsighted. if you assume that as rating climbs and individual player skill climbs, simpler champs that are closer to stat check champs are favored in lower rating, where as higher skill champs with more mechanics should be favored in high rating.
when you consider the division of rank, lets say from huzz's perspective as a primarily diamond player, he is in essence in the top 2-3% of the game rank-wise. which means as expected, huzz's opinion of simpler champs like say garen which can work fine in lower elo is that he's too simple and bad. people at his rating simply know how garen plays and play around it, either in-game item choices/playstyle wise, or in champ select picking a counter and garens life is tough. even simple champs that are still effective like annie are still kinda outshone by others like vex. more mechanics, more play around your opponents, not entirely reliant on a single big burst of damage, but that's not to say she doesn't have the ability to.
in huzz's rating of diamond, garen will have a bad winrate, annie prob neutral, vex, perhaps slightly positive. but when you balance a champ around having various outplay mechanics, you cant really look at low rating games. if you do they prob just are losing to stat checky champs and look like they need a buff to compete, where as the division they were designed around are going "oh god, why are they buffing (insert broken champ name here), they were already oppressive enough in the hands of a good player." because now they have outplay mechanics and a strong stat block to back it up. and the division of decent enough in bronze to trade evenly between low mechanically skilled players suddenly is half healthing you in diamond with almost no risk while mitigating most of your damage and can do so again in 10 to 15 seconds (looking at you, yone)
champs should be looked at like azir was years ago. they knew his skill level was high, and looked at how high rating players played him basically ignoring his abysmal low rating win rate. they nerfed him at a negative overall winrate because he wasn't a low rating pick and skilled players who knew how to play him were given a decent advantage by simply picking him, something they usually could use to snowball and end games. imo, you need to sort champs by difficulty. assign them to a role of low rank pick or high skill pick and balance accordingly. an actual low rating player wont be able to do the mechanics that are needed to play something super skillful in their rank. and even if they one trick their game sense will prob be the limiting factor then to climbing.
when I first started watching huzz about 4 years or so ago, maybe more. seeing a good pre-rework akali was quite satisfying and a katarina was a treat. but both of them have been plucked from their niche of extreme skill ceiling high rank pick and given either a, unneeded buffs and changes to remove skill requirement for playing them, or b, reworked into something more usable for the masses, perhaps making them too good in the process. now when I see either of them I don't have any tinge of, "oh will I get to see a cool skillful outplay today" and instead is, "yup, kats roaming bot again, incoming double." or " wow akali had no right to win that at that health I feel sorry for that guy who died after doing legit everything their champ could do"

Vex is a burst mage, she needs that high damage. It's no more overpowered than an Annie's. If you were going to nerf something on her it should probably be her ultimate. Maybe a shorter range, maybe get rid of the recast thing? Something along those lines. She's not that op as to require something dramatic or needing to have her stats butchered.
Huzz just use poroffessor stats, it's a clear box you can adjust and put in the corner. Very helpful with gold, Cs stats etc. Plus you can have jungle timers as well
Vex is one of the few champs I like that have been released in the last year
So yes a 3 kill camille killing a 6 kill yone is okay and vex dashing around like a mad man is okay but when yone does that its broken easy and no skill

Hi Huzzy or anyone, can someone here tell me when your LP gains will increase? I got +18 untill 20 games ago, I then won 18 out of the last 21 games, and my LP gains went from 18 to 16. My overall winrate now is 58%, like at what point does your MMR go up enough to get your LP gains up again, anyone know? Thanks in advance
