This is pretty much the experience I figured you would have, the Series X is pretty much like a One X. Something I don't see Xbox users acknowledging is that yes Series X is a 1TB hard drive but the USABLE SPACE is 803TB & PS5 is 667TB. I found Sony have optimized the file size of PS5 games which are a lot smaller than PS4 games, lemme know if Xbox has also done this in a future video.
I could tell by you holding the Series X controller in your hands that it is not in the same league as the PS5 one as far as the feel and comfort but I could be wrong.
I honestly had no clue the setup would take 20min on Series X, I remembered on my PS5 it was less than 1 min and that is with the PS5 Update as well as the controller update together.
I personally like that PS5 is not LINKED to any of my email accounts but rather only to my Sony PSN account, I have found Microsoft Email down the line have too many password & verification hurdles to go through. I would have preferred Xbox have a unique account just for there Gaming platform.
The 120hz is cool though but it will really depend on how it is implemented and if it is something they really utilized vs something they use once in a blue moon.
