He's basically a muuuuuch weaker Alex Mercer, virus/mold completely assimilated their original bodies.
Interesting point from the game: When Lady Dimitrescue drinks his blood, she comments he's "Starting to go stale". This is the sign that Ethan's body is degrading and even that early on his body is falling apart.

Recap if Im right. Miranda discovered the mold virus a decade ago after her daughter died from spanish flu. Then came Ozwell Spencer whom saw everything about the exeriments as she mentors him and said that he will found an organization like he saw with her in the cave, hence Umbrella was born. Miranda then experimented humans to find perfect host for her daughter's ressurection. All failed including the 4 lords that Ethan defeated. Then Bsaa proposed miranda to help her but ulterior motives was for it to become a bioweapon hence Eveline was created that came to the events of re7. And then the events of re8 hapoened.
Sooo Ethan is one more of the protagonists that have power by having been infected by a virus/parasite/mold with Jill, cherry, and possibly Leon. Cool 😎
Maybe ethan didn't turn into mold instead he's mutating as the start of re7 because of eve's infection because when duke said " your body is breaking" he can't regenerate himself anymore because of all the stress that his body received.
Just like the other virus in RE series after their death they're turning into a stone then dust. but as that healing bottle he can really regenerate himself without them but he's believing that bottle is a way to heal himself but that was just a trigger to help him regenerates… in that scene that mother miranda took her heart and die maybe that time while he's talking to eve he's slowly regenerating because of his will to save rose.
If he's really not dead… Then it might he will absorb that monster's leftover after the explosion and regenerates himself because of his will to live and protect them as a family(just a theory)

Also if they have been around for so long AND mother Miranda was turning people into lycans why in the beginning the villagers are all surprised to see the monsters? That was clear from the re7 that ethan is not a normal guy his hand taken out by mia his leg taken out by jack etc etc how he survived because his body was made up of mold but one thing is not clear jack needed some person's dead so that he can regenerate himself from there bodies but in ethan case he doesn't need bodies he auto heals himself

Ethan died when baker stepped on his face. however he was infected which caused him to come back to life, throughout the history of RE7 he becomes more mold than flesh but not in time to make eveline capable of control him. It is likely that the reason that he did not die is that some parts of his body (heart) were not converted into a mold, which caused a symbiosis that allowed him to survive. When his heart was ripped out, the symbiosis was broken which caused that his body begin to decompose.

Everyone confused af about how Ethan maintained his mind and normal state while being mold but as Mia said. He’s special he isn’t like the other molded he is special his power is he can control the mold he is made of but he didn’t even know about it that may be why he kept it under control he never knew he had it to begin with he so he never channeled the mold within him idk but all I know is he’s different

I'm kind of happy but sad that Ethan is going to be the next dead by daylight Survivor. That means that we get to see more of Ethan but that also means he is going to be tortured forever

I'm wondering if they killed him off because of the reaction he got last game. But Leading up to this, Ethan did improve in my eyes. I mean ever since we were reattaching severed limbs with water in RE7 it was pretty obvious that whatever infected the Bakers also had infected us, what did surprise me is that Ethan died from the first stomp and was reanimated by the mold , becoming a Human-Mold hybrid, instead of just being infected while alive
