Recreating MOON PIE from GENSHIN IMPACT | ALEX MAKES



Another installment in the Genshin Impact Recipe Recreation series (Season 2) Moon Pie is one of the newer recipes and can only be obtained via the Reputation system. Pickled meat and sweet merengue work in harmony in this Monstadt festival favorite. Let me know what yall think and what else you’d like me to try and recreate!

RECIPE

Ingredients
– 1 lb beef brisket
– 8 whole cloves
– 3 star anise
– 4 cardamom pods
– 1 tbsp whole black peppercorns
– 2 bay leaves
– 4 tbsp salt
– 3 thai red chili peppers
– 3 garlic cloves
– 1 inch ginger knob (sliced)
– 2 cups water
– 1/2 cup vinegar
– 1 cup broth (dashi, chicken, beef)
– 2 egg whites
– 1 tsp lemon juice
– 1/2 cup honey
– 1 tbsp shallots
– 1 tbsp red wine
– 1 tbsp soy sauce
– 1 tbsp butter
– 2 egg yolk
– 1 package puff pastry

Directions
– Combine spices into a bowl. Heat water and vinegar in a saucepan. Add spices into liquid and heat
to dissolve salt. Pour over beef brisket in a container. Cover with plastic wrap and put in fridge for 48 hours.
Flip once after 24 hours.
– Place pickled beef on roasting rack and put in oven for 1 hour at 300 degrees Fahrenheit.
– During this, add spices and 1/2 cup of brine into saucepan. Add 1 cup of broth. Simmer for a few minutes then
strain spices. Take beef out and braise with this liquid and repeat every 30 minutes. Allow beef to cook for an additional
1 hour 30 minutes (Total Time: 2 hour 30 minutes) Shred beef after it has cooled.
– Place 2 egg whites into stand mixer then add lemon juice. Set mixer on high speed and
slowly drizzle honey. Continue to whisk until stiff peaks form.
– Use a small rounded dish to form two bases out of puff pastry. Mix beef and merengue together and place
large pile on top of the puff pastry base. Cover with a sheet of puff pastry, cut excess off. Use a fork to crimp
edges and seal. Use a small knife to create the spiral formation across the top of the pastry. Brush the pastries
with egg yolk. Put in oven at 375 degrees Fahrenheit for 20 minutes.
– While in oven, add 1 tbsp shallots into a pan with neutral oil. Saute for 30 seconds
then deglaze with red wine. Add pan drippings from beef and reduce to half. Add 1 tbsp
soy sauce and then 1 tbsp of butter to thicken sauce.
– Take pastry out and plate. Drizzle sauce around the edges then garnish with cilantro (optional)
